Ingredients
  

  • 2 cups shredded green cabbage packed
  • 3 large eggs
  • 1 tbsp olive oil or sesame oil for Asian twist
  • 2 garlic cloves minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ tsp soy sauce red pepper flakes, green onions

Instructions
 

  • Prep: Shred cabbage, mince garlic, beat eggs in a bowl.
  • Sauté garlic: Heat oil in pan over medium. Add garlic, stir 15 sec until fragrant.
  • Cook cabbage: Add cabbage, stir-fry 3-4 mins until slightly wilted. Season with salt/pepper.
  • Scramble eggs: Push cabbage aside. Pour eggs into empty space, scramble until 80% set.
  • Combine: Mix eggs with cabbage. Cook 1 more minute.
  • Serve: Drizzle with soy sauce if using. Garnish with green onions.

Notes
