shredded green cabbage

or sesame oil for Asian twist

Optional: ½ tsp soy sauce
red pepper flakes, green onions
Instructions
Prep: Shred cabbage, mince garlic, beat eggs in a bowl.
Sauté garlic: Heat oil in pan over medium. Add garlic, stir 15 sec until fragrant.
Cook cabbage: Add cabbage, stir-fry 3-4 mins until slightly wilted. Season with salt/pepper.
Scramble eggs: Push cabbage aside. Pour eggs into empty space, scramble until 80% set.
Combine: Mix eggs with cabbage. Cook 1 more minute.
Serve: Drizzle with soy sauce if using. Garnish with green onions.
Notes
