  • 2 tbsp taco seasoning homemade or store-bought
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice

Burrito Assembly:

  • 4 large 10-inch flour tortillas
  • 2 cups cooked rice white or cilantro lime
  • 1 cup black beans drained and rinsed
  • 1 ripe avocado sliced
  • ½ cup shredded cheese cheddar or Monterey Jack

Optional Add-ons:

  • Pico de gallo, sour cream, hot sauce

Instructions
 

  • Cook the shrimp:
  • Pat shrimp dry, toss with taco seasoning and lime juice.
  • Heat oil in a skillet over medium-high. Cook shrimp for 2-3 minutes until pink. Set aside.
  • Prep tortillas:
  • Warm tortillas in a dry skillet or microwave (15-20 seconds wrapped in a damp towel).
  • Assemble burritos:
  • Layer rice, beans, shrimp, avocado, and cheese in the center of each tortilla.
  • Fold sides inward, then roll tightly from the bottom up.
  • Optional crispiness:
  • Grill seam-side down in a skillet for 1-2 minutes until golden.
