Ingredients
  

  • 150 g unsalted butter softened
  • 100 g light brown sugar
  • 100 g granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • 275 g plain flour all-purpose
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 200 g chocolate chunks milk or dark

Instructions
 

  • Preheat oven to 180°C (160°C fan/350°F/Gas Mark 4). Line 2 baking trays with parchment.
  • Cream butter & sugars in a large bowl until light and fluffy (3-4 mins with mixer).
  • Add egg and vanilla, mixing until fully incorporated.
  • Whisk dry ingredients (flour, baking soda, salt) in separate bowl.
  • Gradually fold dry ingredients into wet mixture until just combined.
  • Stir in chocolate chunks, reserving some for topping.
  • Scoop 50g portions, roll into balls, and place 5cm apart on trays.
  • Bake 10-12 minutes until golden edges but soft centers.
  • Cool 5 minutes on tray before transferring to wire rack.

Notes

Cookies continue cooking on the tray - don't overbake!
