Instructions
Preheat oven to 180°C (160°C fan/350°F/Gas Mark 4). Line 2 baking trays with parchment.
Cream butter & sugars in a large bowl until light and fluffy (3-4 mins with mixer).
Add egg and vanilla, mixing until fully incorporated.
Whisk dry ingredients (flour, baking soda, salt) in separate bowl.
Gradually fold dry ingredients into wet mixture until just combined.
Stir in chocolate chunks, reserving some for topping.
Scoop 50g portions, roll into balls, and place 5cm apart on trays.
Bake 10-12 minutes until golden edges but soft centers.
Cool 5 minutes on tray before transferring to wire rack.
Notes
Cookies continue cooking on the tray - don't overbake!
